Persimmon Pudding
***oil mold and cut out round to fit the top...set aside
***Makes a 4 cup mold ***Blend well until fuffly 3 eggs 1/3 cup sugar ***Add and blend well 2 1/2 persimmons ***Add and mix 1/4 cup oil or apple sauce 1/4 tsp. salt 1 tsp. vanilla 1/2 tsp. cinnamon 1/4 tsp. cloves 1/4 tsp. nutmeg 1 1/2 cups flour ***Cooking In a large pot, bring water to a boil. Place mold in boiling water on a screen Turn burner to simmer Simmer for 1 1/2 to 2 1/2 hours until the pudding springs back and is not too moist Cool for 15 to 20 minutes. Knife the sides and turn out on to serving platter |
